Red and Green Salad with Chia

Chia seeds are the super stars in this salad, low calorie, massive amount of nutrients and loaded with antioxidants. This is an easy, simple salad and dressing, ideal for busy days.

Red and Green Salad with Chia

Ingredients:

  • Serves 4
  • 8 ounces baby greenss
  • 24 cherry tomatoes
  • 2 Hass avocado, cubed
  • 1 red bell pepper, diced
  • 1 ½ tablespoons Chia seeds
Dressing

  • 2 tablespoon extra virgin olive oil
  • 1 lemon, juiced
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
In a salad bowl combine salad ingredients, add dressing and mix to combine.
