Portobello Sandwich Cup

Basically there is no difference between Portobello and Crimini mushrooms. Portobellos are allowed to ripen after they’re picked and so they are larger. Recent research place Protobello mushrooms high on the list in terms of immune boositng benefits as well as antiflammatory support. This sandwich is one of my favorite ways to enjoy Portobello mushrooms.

Ingredients:

  • Serves 1
  • 1 large portobello mushroom
  • 1-2 tabelspoons hummus
  • 4-5 cucumber slices
  • 1-2 red onion sice
  • Kalmata olives, chopped
  • Parsley, chopped
Prepare Portobello Mushroom: Remove the stem with a knife, scoop out the gills with a small spoon and wipe off the top with a paper towel. Brush teh mushroom with olive oil and grill or sauté until stligthly charred. This can be done in advance.

Spread hummus on Portobello mushroom, top with the rest of the ingredients and enjoy!
