Greens and Cabbage Mix Salad

Jicama is a crunchy and sweet root vegetable I discovered during my years in Mexico. Both jicama and red cabbage are full of fiber and vitamin C, a powerful antioxidant. Add to this mix the healthy omega 3 fatty acid from the walnuts and the olive oil and you have a simple salad that you can put together in minutes.

Greens and Cabbage Mix Salad

Ingredients:

  • Serves 4
  • 8 ounce mixed greens
  • ½ head of red cabbage
  • 1 jicama
  • 12 cherry tomatoes
  • ¼ cup walnuts, chopped
Dressing

  • 2 tablespoon extra virgin olive oil
  • 2 limes, juiced
  • Salt and pepper to taste
In a salad bowl combine salad ingredients, add dressing and mix to combine.
