Cabbage Gone Nuts

Cabbage is an ideal weight loss food for it is low in calories and high in fiber plus a good source of an anti-inflammatory amino acid called glutamine. Raw cabbage is the best way to get all the nutrients from this economic and versatile vegetable. This salad is simple yet full of flavor thanks to it’s nutty and savory dressing.
Serves 2

Ingredients:

  • 5 cups shredded cabbage
  • 3 chopped scallions
  • 1 heaping Tbs. almond butter
  • 2 Tbs. rice vinegar
  • 1 Tbs. tamari or soy sauce
  • 1 Tbs. water
  • 1/2 cup chopped nuts of your choice

In a salad bowl mix the shredded cabbage and chopped scallions.

Dressing
In a glass jar with a tight fitting lid mix almond butter, vinegar, tamari and water to form a smooth paste. Add the dressing to the cabbage and mix well.
