Black Bean Butter Lettuce Bowl

Always good to skip the grains. These lettuce cups are simple yet bursting with flavor. Make the bean mix the night before, take a ripe avocado with you, four nice butter lettuce leaves and assemble a delicious meals in a flash.



  • Serves 2
  • 8 butter lettuce leaves
  • 1 15-ounce can black beans, drained and rinsed
  • 1 avocado, preferably Hass variety
  • 1 lime
  • ½ chopped onion, chopped
  • small handful of cilantro, chopped
  • Sea salt
  • Red pepper flakes, optional

Mash beans, onion and cilantro together in a bowl. Spoon into lettuce cups and top with diced avocado and a squeeze of lime juice. Season with salt and red pepper flakes.
