Asian Inspired Salad

The flavors combine perfectly in this salad, the garbanzos manage to tone down the intense flavors of the fennel and the miso. Elegantly simple, anti-inflammatory and bursting with flavor.

Asian Inspired Salad

Ingredients:

  • Serves 4
  • 1 cup watercress
  • 2 cups mixed greens
  • ½ fennel bulb, thinly sliced
  • ¾ cup garbanzo beans cooked
  • 1 radish, thinly sliced
Miso Dressing

  • 3 tablespoons white miso
  • 2 tablespoon rice vinegar
  • 3 tablespoons water
Dressing: In a small bowl or glass jar mix together miso, rice vinegar and water. Dressing will be thick, add water to reach desired consistency.
